About the Fagor Duo Pressure Cooker

Traveling by sailboat, or any boat for that matter, is about the journey and not the destination. While the destination might be the reason you are on the journey, there are many things that the Mad Dogs have seen, witnessed and experienced "enroute" to our destination.

Once you arrive at your destination, the experiences don't stop there. Why travel to an exotic, untouched and pristine location, just to spend hours standing in the galley cooking? Our Fagor Duo Pressure Cooker is the choice pot onboard Mad Dog Voyager.

The pressure cookers of today are not the "jiggly-topped, creaking, noisy, ready-to-explode-the-beans-all-over-the-roof" pots of previous generations. With several safety features present, the Fagor Pressure Cooker sits on the stove top emanated a slow, steady hiss as it cuts hours off the cooking time and reduces the amount of propane needed to cook. With a majority of travelers relying on propane or butane for cooking, getting the most of this limited supply is of utmost importance.

The Fagor Duo Pressure Cooker is solidly constructed of 18/10 stainless steel with a laminated & encapsulated, aluminum-cored base, for even and efficient heat transmission. The "Duo" in the Duo Pressure Cooker refers to the 2 pressure settings the unit is capable of. The low pressure setting maintains 8 lbs of pressure and is ideal for fragile, more delicate vegetables. The high pressure setting allows the Fagor Pressure Cooker to reach an internal pressure of 15 lbs and raises the cooking temperature to 250°F (121°C). The easily replaceable silicone gasket and removable pressure regulator valve make cleaning and maintenance a breeze.
Fagor Duo Pressure Cooker
Studies done on pressure cooked foods report that the ability to cook foods at a higher temperature for a shorter period of time results in foods with a higher nutritional value than those cooked using traditional methods. One of the great staple foods for traveling are dried beans. Typically, pre-soaked beans need to cook and simmer for 4 - 6 hours to reach the soft texture that have warmed many insides on cold stormy nights. The same recipe prepared in our Fagor Pressure Cooker is ready 45 minutes after it is up to pressure . And not only does it cook faster, but once the pot is up to pressure the flame is reduced to a very low setting, using far less propane than placing the pot in the oven for 4 - 6 hours.

An additional benefit of the Fagor Duo Pressure Cooker is the ability to can fresh foods. Many times the Mad Dogs have gone on a shoreside hike or excursion and we return with a bucket load of fresh blueberries, raspberries or salmonberries. The berries are rinsed and canning jars are prepared.

Although many of the berries seem to “mysteriously” disappear during the process of cleaning and rinsing, there are usually enough blueberries or raspberries left-over to warrant canning. Filled to the top with berries, water and a little sugar and into the Pressure Cooker they go. Before you know it there are several jars of fresh packed berries ready to be stored away until they are needed to bake into a juicy blueberry pie

There are several pieces of "galleyware" that we can do without, but our Fagor Stainless Steel Pressure Cooker is one of the necessary items.
